I could read, and I think it's because all words were familiar to me and simple.

there was a course in my engineering, PIT (Probability & Information Theory).

As per that subject any communication has noise. Communication is suppose to be succesful if 70% information is transmitted succesfully. Rest 30% reciver assumes.

See.. whole world is running on assumptions

I had my final semester dissertation on forward error correcting codes-FEC based on viterbie's algorithm. A packet of information transmitted across the network, the receiving station can self correct if some noise is injected in transmission.

It works on pattern matching and picking the pattern which most closely matches the pattern.

To explain the post by chetan, our brains has patterns registered for each combination of words and letters. The pattern takes into context the grammer and semantics as well. So a person who has probably read a word before and when presented with the same word in a twisted context will use the same mechanism as a FEC to typematch the word with what he/she has in his/her brain bank.

Try reading the word when the jumbled word matches a pattern of a different word and that is when the fun begins...

Try reading a paragraph with unfamiliar words .You will be struck soon.

I think we are able to read the paragraph / words as because we are familiar the way the word as a whole look to us.

What did you read it as.. stake or skate.. more likely stake.. coz the word satke is more close to stake than skate in pattern though the semantics could lead the brain to identify it as skate..
