Have you considered looking at the Struts website? Looking at the examples in the Struts downloads? Or searching the web for tutorials? There are plenty!
You also need to state if you're learning Struts 1 or Struts 2.

I have seen the sample applications provided with struts.
I was looking for some great book like Head First to brush up the concepts
