I came across RESTful Java Web Services by Packt Publishing: https://www.packtpub.com/restful-java-web-services/book in a bookstore. It was surprisingly easy to follow.

Hi!
Another nice book on RESTful web services is "RESTful Java with JAX-RS".
One of the more recent books that speaks of SOAP web services is "Java Web Services Up and Running".
