I was trying to install a plugin when all of the sudden eclipse crashed. the error is:

I read on the web that one of the solutions was to delete the .metadata directory in my workspace, but if I delete it, alllllll my settings I lost (3 days setting up eclipse to work in CVS, Countless hours getting ant to run, etc..).
Any Idea on how to solve this issue?

You can try removing the plugin from the plugins folder and then removing the folder for the plugin in the .metadata/.plugin folder. I have done that with a plugin and had it work without deleting the rest of my settings.
