By any chance does anybody knows how to configure eclipse in order to allow unlimited undos, when working in java?

I cant also find any option to enable unlimited undos under Eclipse.

But perhaps using "local history" can help for a moment:
right click > Local History > Replace with... > Than you can choose from the which version you it to be replaced.

Unfortunately, there currently is no way to configure this. See https://bugs.eclipse.org/bugs/show_bug.cgi?id=21476
