Is there an Eclipse plugin that will allow me to connect to remote JBoss server instance.

Several, I think. Check out the popular J2EE Eclipse plugins.

Then there's brute force, where you start JBoss with Remote Debugging enabled and use Eclipse's remote debugging feature. It works, too, just makes you do more of the dirty stuff yourself.

An IDE is no substitute for an Intelligent Developer.
