If you've installed the Eclipse PDE (Plug-in Development Environment), then you can find a lot of information in the help files included with Eclipse.

Here is a tutorial from the Eclipse website which is unfortunately a bit old (from 2003), but probably still interesting. Try searching Google for "eclipse plug-in tutorial" or similar terms.

There are also books available, for example this one.

Also have a look at the Eclipse RCP (Rich Client Platform).
