When I double click on XML file, it opens up , but I can not edit it. Tag names are in red color and variables are in black color. What kind of format is this ?
While same file if I open in word format, I can edit it and all tag names and variables are in black color.

What application is opening the file? If it's a browser then you won't be able to edit; use a proper text editor instead.

If you double click on a XML file, it normally open up in a browser - because this is the default application for a XML file.
If you want to be able to double click and it open up in a text editor, you should change the XML file type's default application to a text editor of choice.
You can also right click on the XML file and choose another application to open the XML in.
I don't know the OS you are working on, so I can't give you the specific guide line to how to do change the file type application link.
