HUGE string to encript in AES

Hi guys,

I'm trying to encript files using AES (mind that I'm very new to the encription world as well as to i/o).

The program suppose to be simple:
1. get the plain file.
2. encript it (AES 128)
3. output the cypher file.

assuming the file is 10M byte (all strings, = plain.txt).

my question is:
1. should I take the file as one HUGE string and send it to the encription
or should I read the file by chunks - encript it and send it to the cypher file.

the first option, while sounds logic, looks inefficent to me.

can anyone comment or provide an alternative
