It depends on what server you are using. For IBM's WSAD/WAS, you could use the red book WebSphere Version 5.0.2 Application Developer Version 5.1 Web Services Handbook.
You can also use two IDEs that are freely available and not time limited if you agree with the liscence agreements. Oracle 10g JDeveloper from http://www.oracle.com and BEA Weblogic 8 SP 4 from http://www.bea.com.
Both provide excellent documentation and are quite easy to use, I am a C# consultant who works with Visual Studio 2003, but I find these IDES very easy to use although I am a Java outsider.
The Websphere however, last time I checked had a 90 day limit on it, but I believe it is the industry leader, the core IDE webshpere is based on, Eclipse, is available for a free download however the functionality will be dramatically reduced off course.
