I am somewhat familiar with Java version 5.0 language and API. Can I use version 5.0 still, if I start now, or might I have to use Java version 6.0?

Why ?

Because I feel more productive using a Mac rather than using a PC and I don't know if Java 6 is out of beta yet on the Mac platform.
