Has anyone tried using WebStart with Mac OS X? I'm just curious to see if it's really given the same level of support and quality as the Windows version.

Yes, I've used it in Mac OS 10.1. It's worked pretty much the same for me. There are minor differences in the way the JRE works; for example, the tabs in my JTabbedPane are centered by default on the Mac, while they're flush left by default in Windows. Go figure.
But Java Web Start itself has worked well for me on the Mac.
