Hibernate In Action (ThoutReader + PDF ebook)
Granted its for Hibernate 2 but the reviews for Pro Hibernate 3 (no ebook yet) are a bit mixed.

With HIA a solid grasp of SQL will help with HQL and some of the other material. It's not really a "work along book". Download Hibernate poke around its sample application (eg\org\hibernate\auction) and try to get it to run. That experience should be enough to help you to get the chapter 3 code to actually run. From then on basically "just read". Once you had a pass through the book have a look at the caveatemptor sample application. The main problem is that it's one big project that uses a lot of different Hibernate concepts and features there are no chapter by chapter mini-projects. You may also want to go through the Hibernate 2 version of CaveatEmptor first there seems to be some EJB 3 and JBoss related matter in the Hibernate 3 version (and you also need Hibernate Annotations for that one its a separate download).
