For Hibernate. The book Hibernate in Action is from the creators of Hibernate. But right now it only covers 2.x, if you want Hibernate 3.0 coverage you have to look at the pdfs you can get from Hibernate.org until Hibernate In Action newer version comes out.

For JPS, Pro EJB 3 from Apress is a good book.
