I'd highly recommend starting with the Hibernate Site, especially downloading the Caveat Emptor example application and looking through it.

I also highly recommend Java Persistence with Hibernate. I still use it as a reference book all the time. It's available as a PDF from Manning, and was just added to Safari Books Online.
