Constructing SOAP message question (SAAJ)

Currently my code, when constructing a part of the SOAP message, this is the best I could come up with:
<mns:sayHello
encodingStyle="http://schemas.xmlsoap.org/soap/encoding/"
xmlns:mns="http://com.test/wsdl/MyHello"/>
I want it to look like this instead:
<mns:sayHello
SOAP-ENV:encodingStyle="http://schemas.xmlsoap.org/soap/encoding/" xmlns:mns="http://com.test/wsdl/MyHello"/>
Using SAAJ API classes, how do I construct the latter, not the former?
