Can anyone point me to a good tutorial on passing complex parameter objects and complex return types (and creating associated descriptors) with either Axis 1.2 or JBoss-ws4ee?

Well, the best thing I'd recommend, personally, is starting with Sun's tutorial on Web Services (found at http://java.sun.com/webservices/docs/1.0/tutorial/ and follow that with reading the documentation for the two environments. Once you learn the basics, learning specifics like deploying to Axis is simple with the instructions in-hand.
