supported content types in jsp

Dear All,
I want to know what are the supported content types that i can use in jsp files ?

I am using "windows-1256"
wich stands for : Arabic(Windows)
but it doesn't work when i retrieve data from mySql database .
it retrieves just question marks like this

I wish any one can help me

How the data are stored in database?

Honestly I don't know how the data is stored in the db.
but for sure it's NOT unicode .
I discovered that if the data is stored in unicode , everything is ok.

the database is mysql , and i access it through phpMyAdmin.
but i am still have 2 problems :
first : how to convert all previous records into unicode ??

second : if the data stored in unicode , it's nor readable through
phpMyAdmin , and i can't browse it or edit records through it.
