Could anybody please tell me what does ? and * stand for in the deployment descriptor?

Well, I can certainly cover "*". When you have "*" in a deployment descriptor (at least in the sections for applying security roles to methods, or transaction attributes to methods) it means use this role for all methods in both the home and remote interfaces.
See Richard Monson-Haefel's book for a good description of this.

I'm sorry, I was refering to the XML-DTD and not the deployment
descriptor itself.
