If I were you I will look at the following attributes
-- Pay -- technologies/frameworks used & opportunity for you to acquire new skills that are popular(e.g. JSF, Spring, Hibernate, Web Service, JMS) -- type of project (e.g. new project, mission critical, enhancements to existing project etc) I prefer new projects where you get to build from scratch -- Their interviewing process (tougher interview proces shows that you are likely to work with high calibre people and good opportunity to learn and grow)
