This is a difficult question which used to be easy. Check out the book reviews on this site as a starting point.

www.javaranch.com/books.html - it covers most of the servlet books out there. Follow the links on the pages to amazon to get more info.

In my experience I found Java Servlet Programming by Jason Hunter extremely useful, and easy going for a relative beginner.

I used this book too, until I realised it's a bit outdated.. the problem was that I was new to servlets so I didn't realise it was 'out of date'.
I noticed at http://www.servlets.com that he (Jason Hunter) is writing the Second Version due out soon.
I'm waiting for that one. For now I stick ot the 'specs' and this board for my info.
