What profession do you think is the noblest?
My vote:
Teaching: The drive in a true teacher to selflessly impart knowledge into young inquiring minds seems very beautiful. An inspiring teacher will be remembered forever. A teacher is second in status to the parents, who can be, ofcourse, the greatest teachers ever.
It's strange, in America, why there isn't a Teacher's Day? Or if there is one, why is it not popular? In India, we celebrate Teacher's Day with a lot of enthusiasm on September 5th, which is the birthday of the great philosopher/statesman, late President Dr S. Radhakrishnan. Teachers are feted, and showered with greeting cards, gifts, flowers on that day... quite a deserving Thank You for all that they do.

Nurse.
Imagine helping people who are unable to help themselves, day in day out. It must be especially hard if you know there isn't going to be any progress, like when you're working with patients who are severely mentally disturbed. It is very hard work, you get to deal with a lot of "dirty" stuff that many of us wouldn't be able to deal with and you have to be completely selfless. And then all the glory (and the money) goes to the doctors.
I wouldn't be able to do it in a million years.

Yes! I recently had the honor of meeting a great nurse whose entire professional life has been devoted to caring for the dying. She is not being paid near as much as I would like to think people with her qualification and devotion should have been paid and she has ensured abuses from some her patients families many a times. But the pull of feeling rewarded caring for people who desperately need her help is just too strong for her to stay away. She also works nights so the family can sleep better knowing that she is with their loved ones. Not everybody can do what she does. And she sure is one of very few on this planet that has not chosen an easy way, but for sure has chosen the most noble way, to make a living.
 
With a little knowledge, a cast iron skillet is non-stick and lasts a lifetime.
