Dictionary meaning of "Deployment" :
Deployment : noun

1. an arrangement or classification of things
2. an implementation, or putting into use, of something

"Deployment" in simple terms , putting your .war file into servlet container, so that container read its "Deployment Descriptor" (web.xml) and instantiate the parameters and servelts to process request to deployed web apps.

I may not be able to explain you fully , any fellow ranchers will explain you in detail.

In short deployment is the proper placement of the files on the web server and making the web server aware of some required configuration so that the web server can determine the deployed files.

For more info take a look at Apache deployment docs.

Hope this helps
