Calendar Class and dates???

I was wondering if anyone knows where the field values come from, I mean for the time zones etc.? Is it from the computer settings?
Also when you roll an instance what is the persistance? can the rolled values be used for other components, and can you "re-roll" the instance after you've changed it once already?
I'm fresh and 'green' and just curious if anyone had any advice about using this class? I would definately welcome and appreciate any
