I believe Panther is the codename for Mac OS 10.3

Tiger is the code name for the 1.5 version of the JDK.

In addition, Tiger is the codename for OS X 10.4, hence: "Tiger on Tiger" for Java 5 on 10.4

"Mustang" is the upcoming version of Java (6.0), and "Leopard" is the upcoming version of Mac OS X (10.5).
