What does JBoss recommend to unit testing my EJBs?

I've tried Embedded JBoss with no success:
Embedded JBoss and Maven
Embedded JBoss and MBeans

There's no decent documentation about this technologies, this is something you can improve.

For now I'll stick with Embeddable EJB 3.0, which is pretty old and limited.

PS: I don't use Seam.

If you're using Java EE 5, to unit test you shouldn't need a container. You're EJB classes are POJOs, so just write JUnit tests against your classes.

I'm guessing you're trying to do integration testing. Sorry, I can't help you there, I haven't messed around with the embedded/embeddable containers.

It is sorta covered in the JavaRanch Style Guide.
