I love Gmail, it's the best online mail program that I've ever used.

I guess some of the new features that come every now and often with Gmail is in Beta. But Gmail itself which has been for over a period of 5 years should of course be a stable one.

Just go to Settings, click on Labs, turn on "Back to Beta," and it'll be like Gmail never left beta at all.
