Will the book help me as a guide to set up a web project from scratch, but using EJB's from an existing project?

I presume you are talking about the Seam book? If your existing EJBs are EJB3 beans, then yes, it will help you reuse those service objects. The book does not specifically address EJB2 beans, but you can easily obtain those objects via JNDI.
