option tag problem

I am using select option tags for displaying multiple dropdown,

where value in option tag contain "<" character, due to that I that option is comming blank in dropdown.
Is there any javascript method to encode it so that, "<" this character is treated as a normal alphabet.

below I pasted psuedo code,

by using these dropdown is comming but "<Orange" option is comming empty(but it is there we select that blank option).
