Could we use other technologies like Ajax frameworks or Flex or use all of these together in application development? Can Grails coexist with other similar technologies?

Yes, there are plugins for many popular frameworks like Flex, GWT, YUI and others. More are showing up all the time. There is also a book in the works from Apress on Grails and Flex.
