doubt in <c:set> from HFSJ

This is from Pg 456 HFSJ second edition

there is one example of <c:set target="${PetMap}" property="dogNAme" value="Clover" />

and <c:set target="{person}" property="name" >
{foo.name}
</c:set>

my doubt is from where did this PetMap and person came? We are not specifying its class name like we did in <jsp:usebean><jsp:setproperty>?

Where they come from doesn't really matter.
