How to identify changed fields

Does anyone have a good method for identifying changed input fields on a form? This is especially important when you are displaying a large collection. For example, suppose I've listed 100 lines on a form and the user changes one field on one line. How can I identify which field changed or at least which line it was on? I would want to do one database update in this case. Thanks!
