Rename Date's "getAsString" method to "toString", and add more Javadoc comments.

Change this into simpler form:
It is possible to for a student to sign up twice for the same meeting; shouldn't you prevent this?

As well as Rob's comment about signing up the same student twice, you should consider throwing an Exception if that happens, or if the number of possible students is exceeded.
