Weill, you will definitely gain experience with clients. In fact, a good sales engineer will be juggling many clients at the same time.
As for the type of experience, that would depend on the company, and the products -- but I would guess it runs the gamut. Some products pretty much sells themselves, and the SE is mostly doing presentations and some demos. Other products are complicated (and expensive) and will require long "proof of concepts". And because of follow on sales, many SEs do support too.
