Is anyone aware of a survey that lists the number of candidates that sit for individual Sun certifications in a year, or perhaps something similar?

I doubt this information is available. Oracle has such surveys periodically, but results are closed.

You can estimate certifications popularity by looking at number of posts in Professional Certification section
