Writing EJB client code is no different in a Struts application than for any other type of application. Just look at the documentation you're using to write your EJBs. There will undoubtedly be examples of how to write EJB client code there.

Be aware that client code for an EJB Version 3 session bean will be different than for an EJB version 2.x session bean.

It is sorta covered in the JavaRanch Style Guide.
