Does anyone know how to configure
so that specific directories and the property files within them are added to the classpath when the "jetty:run" command is executed?

Shouldn't all of that go into your WAR file? And thus be part of your project description in the pom.xml.
A specific description of what you want to accomplish might help us provide a better response.
