I've seen questions about applets in some mock exams, including the one here on JavaRanch, but neither HFSJ or the Lyons Study Companion has anything to say about applets. Both of these books claim to cover everything you need to know. So does the exam (version 5) cover applets or not?

It does not. Some of the materials you've seen are probably really old; anything GUI-related was removed from the exam years ago IIRC.
 
It is sorta covered in the JavaRanch Style Guide.
