We would like to be able to customize the registration screen to capture other information.
Is there a simple way to include extra fields e.g. Organization or phone number?

The easiest way is to just re-purpose some of the existing fields (e.g. all the IM name fields..) Just change the freemarker template files to use the labels you want. Just make sure the fields in the jforum_user table are large enough.

You CAN add additional fields, but this requires modifying a fair amount of code and templates... e.g. your DAO implementation, the forms handing code, and the like.
