I have used Activiti in one of our projects this year and would like to know if we can get more documentation on the database tables/columns that are used with in Activiti.

Good question. In the book I included a database table overview and discuss the most important columns.
Would that be helpful for you?

Yes ..That will help ...Will check that if I am lucky ..:-)

I agree. Here's the link: http://ej-technologies/jprofiler - if it wasn't for jprofiler, we would need to run our stuff on 16 servers instead of 3.
