A co-worker and I were cleaning out the server room and came across an old controller board with 100 3v relays on it. We started talking about what we could do with them and the topic of Arduino came up. Given that I'm totally new to Arduino, we were curious about the maximum number of relays a single Arduino could support.

Depends on the board you use (check their number of i/o ports)
You will have to add a driver circuit with protector for each relay.
