Any plans in the project to create a port of iText to Ruby so that we don't need something like JRuby?

I have enough work as it is with the Java version of iText.
Paulo manages the C# port; Kazuya is responsible for the J# port.
Both ports are getting more and more successful. So if you want
to start up a kick-ass project: feel free to write an iText port,
and we'll provide traffic to your site ;-)
