Is it possible to determine what service pack a particular WebLogic Server installation is running? Is it in the logs, on the console, or in a text file somewhere? Right now I'm using both WLS 6.1 and 7.0.

Sure.
Open up the WebLogic Console. Click on the Console item in the menu tree (it is the first item). Then select the Versions tab.
