The Eclipse online help includes a lot of documentation, and there are a number of good books on the topic; search for "Eclipse" in our "Book Reviews" forum to find them. I'd recommend "Eclipse in Action", "The Java Developer's Guide to Eclipse", or "Eclipse: Building Commercial-Quality Plugins" if you want a basic, detailed, or exhaustive book on the topic, respectively.
