I hope so, it's the one I'm using.
Throughout this exercise, you must use exclusively the Java 2 platform. You are not required to develop your code using any particular implementation of the Java 2 platform, but the submission that you return must have been tested and shown to work under a production (not development) version of the Sun Microsystems' Java 2 platform
From the above assigment's paragraf I deduce we can choose whatever Java 2 platform version we want.

Yes you can, make sure that your SDK version and the platform you developed on are in the README

Yeah, I'm using it too. There's some cool stuff, like JSpinner which I'm loading with integers 1 to the current seats available, to allow the user to select how many to book.
