please recommend the best open source eclipse plugin for hibernate.
I found 3 at hibernate.org
Which one of these support the latest version of hibernate and
which one is the best.

I tried hibernator and it was good learning tool for generating those mapping-descriptors from a database.
You did not ask, but I find the manning book (currently only first 5 chapters available) very good.

Hibernate Synchronizer. Yeah as for the book, looks like it is on its way to become one of the best sellers?. Kudos to the authors and ofcourse Manning!
