Building Web Services with Java: Making Sense of XML, SOAP, WSDL and UDDI
Java Web Services (I did not like it very much)
Web services tutorial ( I love it) @ www.javasoft.com/webservices
IBM developerworks has Webservices toolkit and many tutorials

Note that UDDI is not anywhere as solid a specification as SOAP and WSDL. It looks to me like most people will end up dealing largely with WSDL.
