Does the book cover PayFlow Link and Pro ? Any advice and/or comparison on which plans to choose?

Yes, both are covered in Chapter 7. For most cases, I'd recommend Payflow Pro. It provides a better buyer experience because they don't have to leave the merchant website. It's also more expensive though, both because the service costs more and also you have to acquire an SSL certificate to secure your website. With Payflow Link, you send the buyer to the PayPal site and they enter their credit card details there.
 
Don't get me started about those stupid light bulbs.
