What is the difference between the 3 of the following?
1)Unicode
2)UTF8
3)8859_1

These are all character encodings. You use them when you are translating character data from one encoding to another one. Unicode is the standard character encoding used internally by java in char types. UTF8 is a variant of Unicode that is used to save space when writing unicode characters to a data file via a DataOutputStream.
8859_1 is the typical 8-bit Latin-1 encoding used by most computers in the United States.
