Can anybody suggest as to which is the best book for each of these topics?

As a very beginning, the (free) developer's guide that is bundled with the j2sdkee1.2.1 is very good. It's available online here: http://java.sun.com/j2ee/j2sdkee/devguide1_2_1.pdf

Also a good book, but unfortunately a few version behind, is Ed Roman's Mastering EJB. The entire book is available online (free) at: http://www.theserverside.com/resources/book.jsp As you can see, it requires you to sign in to theserverside.com, but this site is excellent, so it's worth the time.
